The only possible action is to cancel it. I don't have that problem with any other friends I want to challenge. Just this specific one. Otherwise you cannot start playing until the other person manually accepts the challenge. I believe the challenge has to be completed within 3 days, which is from challenge creation rather than when they accept. My guess is this person isn't following you but the others are.
