How should the biddings go?

We had more different views on how these hands should be bid than there were post-mortemers:

IMPs.

For E/W, NT overcalls are nat (except 2C for majors). NS have a takeout X if W overcalls. No substantial further agreements.

a) What is your preferred auction for all four hands if S's 1N showed 12-14?

b) What is your preferred auction for all four hands if S's 1N showed 14-16?

I wouldn't double with the North hand. Hopefully you have a way to show a t/o shape that can't stand a conversion of a double. It is best if this can be shown directly rather than through some kind of Sohl since these hands are likely to be preempted.

Opposite 12-14, I think North just has use 2NT planning to sign off in 3. So we will defend 4 undoubled.

Opposite 14-16 it is close. Maybe North feels lucky and maybe he has an immediate 3 bid to tell his story. South will bid 5, then, if North has promised hearts, otherwise 4NT and we end in 5.
