There was a much better example of when to do this in the recent Ravens-49ers Superbowl, but honestly the right situation for it doesn't come up that often. A blocked/fumbled punt for a touchdown followed by an onside kick... why subject yourself to the risk, even if it's a 1% risk? --said the NY Giants fan who still remembers that Joe Pisarcik couldn't take a knee... They signed Manning and Osweiler at the same time, with the intention of grooming Os to eventually take over. Manning has not been cooperative in aiding the transition, insisting on staying in games when he shouldn't. (I guess John Fox thinks that Manning is the head coach.)
