Whenever I give a hand to someone in real life, I always draw a little table marker with an "X" in the middle. Always clears up the confusion. I have also suggested that it is usually clearer to have South as declarer in any play-problem, so if it is a defence problem you should be sitting either East or West (and not South as they often place you here). I guess these would be northwest and northeast. I can't imagine a situation where I want to describe 'declarer's hand an an opponent, but most certainly dummy and a defender.
